Sweet potato pancake Recipe

Preparation:

  1. Mix all the ingredient in a large bowl until smooth.
  2. Cook on hot greased skillet by placing the mixture with a table spoon.
  3. Once bubble starts appearing on one side, flip to cook the other side until brown.

Can be served with maple syrup.

Preparation time: 15 min.

Makes around 20 pan cakes.

Approximate calories per pan cake: 71 cal

Please note: To make it gluten free, brown rice flour, sorghum flour and tapioca starch can be used of equal amount. Coconut oil can also be used instead of butter
