Sweet potato pancake Recipe
- Mix all the ingredient in a large bowl until smooth.
- Cook on hot greased skillet by placing the mixture with a table spoon.
- Once bubble starts appearing on one side, flip to cook the other side until brown.
Can be served with maple syrup.
Preparation time: 15 min.
Makes around 20 pan cakes.

Please note: To make it gluten free, brown rice flour, sorghum flour and tapioca starch can be used of equal amount. Coconut oil can also be used instead of butter
