Spinach Stuffed Chicken Breast

Step 1

In 12-inch skillet, ensure you cook bacon slightly over medium heat for 5-8 minutes, stirring until crisp. Removing the bacon from skillet, reserve fat. Drain from bacon on paper towels, crumble.

Step 2

Cook onion andgarlic all in bacon fat on over medium-high heat 2-3 minutes, always stirring, for onion to tender; set aside. In a bowl, mix spinach, egg, cheese and thyme. Stir in onion-bacon mixture.

Step 3

Cut3-inch-long pocket in thick side of chicken breast to within 1/4 inch opposite side of breast. Stuff into pocket about 1/4 cup spinach mixture in each chicken breast. You may sprinkle pepper on chicken.

Step 4

Heat oil slightlyover medium-high heat. Then, add chicken; uncover, cook 8-10 minutes, turning only once when light brown on either sides lower heat. Cover; cook (170ÂF) 10-20 minutes longer, turning occasionally, until chicken is brown. Serve with rice.
