Healthy Chicken Noodle Soup

This healthy Chicken noodle soup is quick and easy to prepare for the winter months and has the added bonus of being low in calories and fat. It is highly nutritious and contains fresh root ginger which has a numerous health benefits such as helping to clear colds and nausea.


To cook simple add the stock, chicken, ginger and chopped garlic to a large saucepan. Bring the broth to the boil and simmer for about 20 minutes until the chicken has cooked through. Remove the chicken and slice into small pieces then return it to the soup along with the rest of the ingredients. Leave for another couple of minutes for the noodles to cook, then it is ready to serve! For a more filling meal serve with wholemeal bread or croutons.
